End of Term Dinner

Although producing nutritious and tasty vegetarian meals for 65 teen-agers can be a culinary challenge, term-time cooking at Brockwood does become a little routine for a chef. Thus the opportunity to produce a festive meal, such as the annual dinner held before the end of first term in December comes as a welcome change.

Here was our menu this year:

“Raw” canapes (cashew “Boursin” and hijiki “caviar” on a carrot and beetroot cracker)

First course

Mixed greens with Dorset Blue Vinny cheese, walnuts and pears
Green and black olive tapenade
Crusty harvest and white rolls

Second course

Mushroom and spinach pastry plait*
Roast potatoes and Brockwood parsnips
Carrots and Brockwood brussel sprouts

Third course

Tiramisu
Vegan chocolate tart
Fruit salad
